Royal Relish Imperial Chicken Salad

Our delicious recipe for Imperial Chicken Salad is perfect for any occasion, from a picnic to a party. It tastes great with just the first three ingredients, but you can make it more festive by adding grapes, nuts, and tomatoes. These additional items add more flavor, color, and texture, creating a tasty sandwich that's just like something you'd get from a deli.

We prefer to use smoked chicken, but you can easily substitute baked or rotisserie chicken from the grocery store, or even canned chicken, and still get great results. Make it a day ahead or a few hours before your guests arrive, and the flavor will be even more robust. Enjoy it as a sandwich or on small crackers as a simple appetizer. It also makes a fantastic salad when served on a bed of lettuce.

Ingredients

4 boneless, skinless baked or grilled chicken breast

5 Tablespoons of Winfrey Foods Royal Relish Chow Chow                                     

1/2 cup of mayonnaise or to your liking

1/4 cup of chopped walnuts

1/2 cup of halved grapes

1/2 cup cut cherry tomatoes

Make it!

  1. Chop or shred chicken breast
  2. Mix in mayonnaise.
  3. Stir in Royal Relish.

FOR A FESTIVE CHICKEN SALAD

  1. Add in nuts
  2. Lightly stir in grapes.
  3. Add cut tomatoes

Serves 6   

Quick Tips:

Put lettuce on the bottom to keep the sandwich from becoming soggy.

Use a thicker crust of bread with a heavy filling.

If you use a hard roll carve out some of the dome and fill it with the chicken salad.
